Airfryer Sticky Salmon

Dijon Mustard - 2 Tablespoon
Honey - 1 Teaspoon
Salmon Fillet 10½ Oz Salmon Fillet
Shelled Edamame 3½ oz
Cucumbers 7 Oz
Scallions - 2
Avocado - ½
Rice Vinegar - 2 Teaspoon
Greek Yogurt 3½ oz
Sriracha - 1 Tablespoon
water - 2 tablespoon

Step 1
Whisk together the Dijon mustard and honey in a bowl with a pinch of salt and black pepper. Cut the salmon into 3-4cm chunks and toss them through the glaze until coated. 2 tsp Dijon Mustard 10 oz Skinless Salmon Fillet
Step 2
Spray the rack of your air fryer with non-stick spray. Add the salmon chunks and cook at 400°F for 6 mins until golden and cooked through. Remove and set aside, then toss in the edamame and cook for 2 mins until piping hot. i Olive Oil Spray 3% oz Shelled Edamame
Step 3
Thinly slice the cucumber, scallions, and avocado. Toss the cucumber with the white parts of the scallions (reserving the greens to garnish), rice vinegar, and a third of the sriracha. Set aside.

2 tsp Rice Vinegar
½/2 tbsp Sriracha

Step 4
In a small bowl, thin the Greek yogurt with the remaining sriracha and water until you've got a drizzling consistency.
31 oz Whole-Milk Greek Yogurt

Step 5
Heat the sticky rice according to package instructions. To serve, spoon the sticky rice into bowls and top with the sticky salmon, cucumber salad, and sliced avocado. Drizzle the yogurt sauce

Air Fryer Boneless Chicken Thighs

Ingredients

  • 6 boneless skinless chicken thighs trimmed substitute with bone-in chicken thighs
  • 1 tbsp smoked paprika substitute with sweet paprika
  • ½ tsp red pepper flakes
  • 1/2 tsp sage
  • 1 tsp Garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • ¼ tsp cumin
  • 2 tbsp olive oil substitute with any other flavourless oil
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  • To a small mixing bowl, add smoked paprika, garlic powder, onion powder, sage, red pepper flakes, parsley salt and pepper and mix to combine to form a dry rub.
  • Pat the chicken thighs dry with a kitchen towel so it is moist free, trim off excess fat (the chicken can be washed with water and lemon if desired) and transfer to a bowl.
  • Add the dry rub to the chicken thighs and mix to combine making all the chicken is coated. Then add olive oil and Worcestershire sauce and mix.
  • Marinade the chicken for 30 minutes to 24 hours if time is not of the essence. Otherwise, proceed to cook immediately.
  • Preheat the air fryer at 180C/380F for 5 minutes. spray cooking oil in the air fryer basket. This is optional as the marinade already contained oil.
  • Arrange the chicken thighs in the air fryer basket in a single layer. You should be able to fit about 6 in the basket depending on the shape of the basket. If need be, cook the chicken in batches.
  • Cook for 15 to 18 minutes depending on how you like your chicken cooked flipping it halfway for even cooking. The internal temperature of cooked chicken should register 165F/63C. If using bone-in chicken thighs, please check my cooking time guide below.
  • Serve immediately as desired.

Chicken Thigh Marinade Ingredients

Ingredients
  • 8 boneless, skinless chicken thighs, fat trimmed, 32 oz total
  • 1/4 cup low sodium soy sauce
  • 2 1/2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 3 cloves garlic, crushed
  • 1 teaspoon Sriracha hot sauce
  • 1 teaspoon fresh grated ginger
  • 1 scallion, green only sliced for garnish
Directions
  1. In a small bowl combine the balsamic, soy sauce, honey, garlic, sriracha and ginger and mix well.
  2. Pour half of the marinade (1/4 cup) into a large bowl with the chicken, covering all the meat and marinate at least 2 hours, or as long as overnight.
  3. Reserve the remaining sauce for later.
  4. Preheat the air fryer to 400F.
  5. Remove the chicken from the marinade and transfer to the air fryer basket.
  6. Cook in batches 14 minutes, turning halfway until cooked through in the center.
  7. Meanwhile, place the remaining sauce in a small pot and cook over medium-low heat until it reduces slightly and thickens, about 1 to 2 minutes.
  8. To serve, drizzle the sauce over the chicken and top with scallions.
