Superbowl
Minimalist Baker
This recipe makes 10 medium baked patties or ~16 thin sautéed patties ​
Pantry Items
  • ​Salt 
  • Pepper
  • Vegan Worcestershire 
  • chili powder (or sub cumin)
  • raw walnuts (1/2 cup)
  • Quinoa
  • kidney (or black) beans - 15-ounce can 
  • some nonstick spray or add a bit of olive oil​
Produce Items
  • ​1/2 red onion 
  • 6 button or baby bella mushrooms (1 1/4 cup diced)

Food Preparation Part I
Food Preparation - Step 1- for cooking step 1
  • Red Onion (1/2) - finely diced 
  • Mushrooms - diced
  • cooked quinoa - 3/4 cup 
  • kidney (or black) beans (well rinsed and drained) - 15-ounce can


Part I Cooking Instructions
  1. Stovetop - skillet medium/low heat (5 Minutes)
    - heat 1 TBL spoon olive oil
    - sauté onion and slowly 
    - season with a pinch salt and pepper
  2. Stovetop - skillet medium (3 Minutes)
    - Add mushrooms 
    - another pinch of salt and pepper and sauté until  slightly browned and fragrant 
  3. Stovetop - skillet remove from heat
    - add beans and mash
    - another pinch of salt and pepper
    - transfer to mixing bowl 
  4. Mixing Bowl
    - add quinoa
    - add chili powder or cumin and stir
    - add the walnuts a little at a time until the mixture is thick and malleable enough to form into patties.
  5. Refrigerate Mixing Bowl (15 minutes)

Food Preparation - Step 2 
  • Coat a baking sheet with nonstick spray or olive oil.
  • form into small patties and place onto baking sheet 
  • brush/spray the tops with olive oil and
    • another pinch of black pepper and
    • any leftover crushed walnuts (optional)

Part II Cooking Instructions
  1. Preheat Oven - 375 F (15 Minutes)
  2. Oven - 375 F (40-45 Minutes)
    - flipping around the 20-minute mark
    - Cook until brown on both sides (3-4 minutes on each side)

    *Par-Bake Alternative (15-20 Minutes)
    - Flipping around the 20-minute mark
    - Then cool and stack between layers of parchment paper and cover
